Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
In a large bowl, mix the ground beef, buffalo sauce, half of the blue cheese, breadcrumbs, egg, garlic powder, salt, and pepper until just combined. Divide the mixture into eight equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
Bake for 25 minutes until the internal temperature reaches 160 degrees. Remove from the oven and let rest for 5 minutes.
While the meatloaves bake, toss the sliced celery with olive oil and lemon juice in a medium bowl. Set aside.
Drizzle the baked meatloaves with ranch dressing and top with the remaining blue cheese. Serve each portion with a scoop of the celery salad on the side.
