Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
In a mixing bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, 1 teaspoon salt, and black pepper. Mix until evenly blended, then shape the mixture into a loaf about 8 inches long.
Wrap the loaf with the bacon slices, tucking the ends underneath. Place the loaf on the prepared baking sheet.
In a small bowl, stir together the bourbon, brown sugar, and ketchup to make the glaze. Brush half of the glaze over the bacon-wrapped loaf.
Toss the sweet potato wedges with the olive oil, paprika, and remaining 1/2 teaspoon salt. Arrange the wedges around the meatloaf on the baking sheet.
Bake for 45 minutes. Remove the pan from the oven, brush the remaining glaze over the meatloaf, and return it to the oven for another 15 minutes until the bacon is crisp and the internal temperature of the meatloaf reaches 160 degrees.
Let the meatloaf rest for 5 minutes before slicing. Serve slices with the roasted sweet potato wedges.
