Heat the oven to 400°F. Lightly grease a 12-cup muffin tin. Line a rimmed baking sheet with parchment paper.
In a large bowl, combine the egg, breadcrumbs, onion, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, salt, and black pepper. Add the ground pork and mix gently until just combined.
Divide the pork mixture into 8 portions. Shape each portion into a small loaf and place it in a muffin cup. Cut the bacon slices in half crosswise and wrap one half around each loaf, tucking the ends underneath.
Put the carrots and baby potatoes on the prepared baking sheet. Toss them with the olive oil and spread them out in a single layer. Place the muffin tin on a separate oven rack.
Bake for 25 to 30 minutes, turning the vegetables once, until the vegetables are tender and the pork reaches 160°F in the center. If the bacon needs more browning, broil the muffins briefly while watching them closely.
Let the muffins rest for 5 minutes before removing them from the tin. Serve with the roasted carrots and potatoes.
