Preheat the oven to 375°F. In a mixing bowl, combine the ground beef, cheddar cheese, egg, almond flour, garlic powder, salt, and black pepper. Mix until evenly blended.
Divide the mixture into four equal portions and shape each into a small loaf.
Wrap two slices of bacon around each loaf, tucking the ends underneath.
Place the wrapped loaves on a baking sheet and bake for 25 to 30 minutes until the internal temperature reaches 160°F and the bacon is crisp.
While the meatloaves bake, bring a pot of water to a boil and cook the broccoli florets for 3 to 4 minutes until bright green and tender. Drain well.
In a skillet over medium heat, melt the butter and add the minced garlic. Cook for 1 minute, then add the drained broccoli and toss to coat.
