Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix with your hands until just combined.
Divide the mixture in half. Press half into a loaf shape on the prepared baking sheet and create a shallow channel down the center.
Fill the channel with the shredded cheddar cheese and diced jalapeños, keeping the filling away from the edges.
Cover with the remaining meat mixture and seal the edges so the filling stays inside. Shape into a neat loaf.
Lay the bacon slices over the top, slightly overlapping, and tuck the ends underneath the loaf.
Bake for 50 to 60 minutes until the internal temperature reaches 160 degrees F and the bacon is browned. Let the loaf rest for 10 minutes before slicing.
