Preheat the oven to 375°F and line a baking sheet with parchment paper or foil.
In a mixing bowl, combine the ground beef, egg, salt, and pepper. Mix until the ingredients are evenly distributed.
Divide the meat mixture into four equal portions. Flatten each portion slightly, place ¼ cup of prepared Stove Top Stuffing in the center, then fold the meat around the stuffing to form a small loaf.
Wrap each mini meatloaf with two slices of bacon, tucking the ends underneath to secure them.
Place the wrapped meatloafs on the prepared baking sheet. Brush the tops and sides with half of the BBQ sauce.
Bake for 30 to 35 minutes until the internal temperature reaches 160°F and the bacon is crisp.
Remove from the oven and brush with the remaining BBQ sauce before serving.
