Preheat the oven to 375 degrees. In a large bowl, combine the ground pork, grated apple, chopped sage, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until evenly blended.
Divide the mixture into four equal portions and shape each into a small loaf. Place the loaves on a baking sheet lined with parchment paper.
Bake the meatloaves for 25 to 30 minutes until they reach an internal temperature of 160 degrees.
While the meatloaves bake, place the cubed butternut squash in a pot and cover with water. Bring to a boil and cook for 12 to 15 minutes until tender.
Drain the squash, then return it to the pot. Add the maple syrup and butter, then mash until smooth. Season with a pinch of salt if needed.
Serve each mini meatloaf with a scoop of the maple butternut mash.
