Heat the olive oil in a skillet over medium heat. Add the chopped onion and diced apple and cook until the onion softens, about 5 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the ground beef, cooked onion and apple mixture, chopped sage, egg, salt, and pepper. Mix with your hands until evenly combined.
Divide the meat mixture into four portions. Flatten each portion into a patty, place a spoonful of prepared Stove Top Stuffing in the center, and fold the meat around the stuffing to form a small loaf. Seal the edges well.
Place the mini meatloafs on a baking sheet. Bake at 375°F for 25 to 30 minutes until the internal temperature reaches 160°F.
